2015 Perliss - The RAVENS Reserve Black Wax

With the 2015 Ravens, we continued working with Tuscan amphorae. These handmade, terracotta vessels show reveal the pure taste of Cabernet Sauvignon without the influence of oak. Although comprising only 25% of the blend, the amphora-aged portion adds a distinctly mineral freshness to the finished wine. The wine is aged for 22 months in amphora and French oak barrels made by small-production coopers. It is bottled unfiltered and unfined.

Now, after years of perfect celling, these wines are entering an ideal drinking window, but are still quite youthful and fresh, allowing for further aging if desired..

The bottles are hand-dipped in a soft, black wax, distinguishing these 24 cases as a reserve.
