The Wines

100% Cabernet Sauvignon from our estate vineyard.  Yields are kept down and organically farmed to achieve the best expression of the fruit. The grapes are hand-harvested and naturally fermented with the vineyard's indigenous yeast. Made 80% in French oak and 20% Tuscan terracotta.

The 2015 vintage shows depth and complexity, while remaining nimble and smooth. 

Inspired by the past, CORVUS PACIFICUM, XXMMIII,  revives an Ancient Roman recipe in which 1% seawater was blended into 99% wine.  The resulting amplification of flavor and structure is striking. 

Amphora-aged estate Cabernet Sauvignon. Luminous and sleek, the 2021 PEARL of the RAVENS, offers an unadulterated experience of Cabernet Sauvignon. With the oak influence dialed back to a whisper, the purity of the fruit is in the starring role. 

Introducing The HERON: a bold tribute to Petit Verdot, a Bordeaux varietal (aka, Heran) typically relegated to the background.

The 2022 vintage is one of The SERPENTS most lyrical expressions, full of fresh, juicy fruit - peach, honeydew - and energizing minerality. At just 10.6% alcohol, it will brighten up your table.

Skin-contact Sémillon. All the opulence of the Bordeaux varietal, here in a more textured incarnation, with a shimmering amber hue and distinct flavor profile. As this wine is the SERPENTS, but with extended skin contact, its naturally called SNAKESKIN.
