A dry Sémillon from The Bavarian Lion, a 28-year-old vineyard in Knights Valley.  Grapes are hand-harvested then fermented with indigenous yeast.  A portion was fermented on the skins, adding notable complexity. Aged 18 months on its lees in Tuscan terra-cotta amphora and neutral French oak barrels. Richness and brightness in perfect balance. A wine for immediate enjoyment or for cellaring.  Hand-dipped in beeswax.  241 cases produced. 1.5L Magnum.

Aaron Pott's Tasting Notes:
NOSE: Pineapple, wet rock, honey, acacia flower, apple pie, white peach, ripe pear, orange blossom, lemon cake, passion fruit, sea breeze.
PALATE: Very broad attack with multilayered fruit flavors, pecorino, pear, peach - less acidic than past vintages, but makes up for it with density. Creamy in the mid palate that remains into the finish. Finishes with honey, pear and peach with wonderful length.


Aaron Pott's Serving Recommendation

Best not to serve it too cold, 50°F, as some of the best aromas come out then. I would decant for 30 minutes at least, just to get the best of it.
